Fuchsia Dunlop’s Hangzhou wontons in soup
This popular snack, though easy to make, is a lovely example of Hangzhou cuisine. The slippery wontons are served in a broth all floaty with shrimps, seaweed and spring onions: refreshing and soothing at the same time.Wonton skins can be bought fresh or frozen in most Chinese food shops; they should be very thin and supple.
